Announcing Two Saints and a Taco Tasting Co-Chairs— Marcia and Rodney Galatas
Houston (Sept. 10, 2024) – The exciting news is out, and it’s the “tac ’o the town.” University of St. Thomas-Houston alumni, Marcia
Galatas, M.Ed ’95, and her son Rodney Galatas II, MBA ’11, will co-chair UST’s annual party of the year, which happens to be the Alumni Association’s biggest scholarship fundraiser—the one and only Two Saints and a Taco Tasting on Nov. 7 at Saint Arnold Brewing Company.
Galatas Involvement from Get-go
Two Saints and a Taco Tasting combines an enormously fun Celt alumni gathering with a significant scholarship fundraiser. Marcia Galatas was on the Alumni Association Board of Directors with then- president Drew Wilson ’02 when he came up with the Two Saints and a Taco Tasting inspiration 13 years ago.
“Drew was a visionary,” recalled Marcia, a retired educator and world traveler, “and so courageous to get the event launched. I was Alumni Association Board president the following year and was honored to help carry the Two Saints and a Taco Tasting torch to even greater success. Every year since has been focused on bigger and better. And we never disappoint.”
Rodney, a corporate pilot for T.C. Energy, who joined the Alumni Board of Directors last year, added, “I remember the very first Two Saints. From its inception, you could tell it was a game-changer. People always leave feeling terrific. It’s the greatest fundraiser I’ve ever witnessed.”
Both Marcia and Rodney enjoy giving alumni a reason to re-engage. They also want to see this year’s celebration branch out to include participants who would like to become better acquainted with Houston’s only Catholic university.
The Party Part
All the fun happens at the location of Texas’ oldest craft brewery, where Saint Arnold creates world-class brews. And what about the food, you ask?—Two Saints and a Taco Tasting is a feast of yummy proportions: Chefs from a dozen restaurants put their reputations on the line featuring their tastiest tacos, each vying to take top prize at the event. Can you fathom the flavors? Add tacos, frosty beers, and the great company of new and renewed alumni friends and you have the ingredients for a real memory-maker. What’s more, there will be some surprises this year, but Marcia teased, “Those are top secret.”

Full Circle to the Co-Chairs
Fundraising brings us back to the Two Saints and a Taco Tasting Co-Chairs Marcia and Rodney Galatas.
This UST pair (wife and son to the late Rodney Galatas, Sr., MBA ’95) has a family tradition of giving their time, talent, and treasures to help those in need.
Marcia, a longtime event sponsor and member of UST’s Major Giving Society, offered, “This is just one more way of giving. I get excited about doing something for someone else.” Rodney, who grew up on the UST campus while both parents were getting their graduate degrees,
affirmed, “Giving back is big in our family.” Both agree that giving is what makes the world a better place.
